Bubble & Squeak Fry Up

Boxing Day: Bubble & Squeak
Dairy Free, Egg Free, Nut Free, Lactose Free, Red Meat Free, Rice Free, Gluten Free, Wheat Free, Yeast Free, Endometriosis, Crohns & Coeliacs Safe.

A lot of people ask me "Your Christmas Dinners are going to be sparse aren't they?" ...


Ingredients:
1/2 Red Onion
1 Tsp Vegan Sunflower Pure Spread
Any left over Christmas or Sunday Roast Vegetables
Mine Included:
Boiled Sprouts
Roast Parsnips
Mashed Sweet Potatoes
Roasted Sweet Potatoes
Boiled Carrots

You can include any vegetables in a fry, usually the main ingredients are Mashed Potatoes and Brussels Sprouts. 



Pile all of your left over vegetables together in a bowl.


Rustically mash them altogether.

Chop your red onion and cook them until soft.

Mix them together with your mash.


Next add  your pure spread to a pan and let it melt over a medium to low heat.

Scoop your mashed vegetables into the pan and let them cook.



After 10 minutes turn your mash, do not worry about the bottom getting brown at the moment.

Once your mash has heated through, turn off the heat and let it stand for 5-8 minutes.

This is to let the browning on the bottom of the pan steam off so that you will get that lovely flavouring.

Mix your mash with the browning on the bottom of the pan before serving.

You can serve your Bubble & Squeak with any other left overs you might have.

Slices of Roasted Turkey
Cranberry Sauce
